  • 1 tbsp. vegetable oil 

  • 1 bell pepper cut into thin strips 

  • 1 small onion cut into strips from top to root end 

  • 1 (12 oz./340g) can pulled pork, drained 

  • 1 1/2 tsp. chili powder 

  • 1 cup shredded mexican cheese 

  • 6-6" or 3-10" tortillas

  • 1 bell pepper cut into thin strips

INSTRUCTIONS

Heat oil and sauté peppers and onions until onions are translucent. About 5 minutes. Set aside. Mix pork and chili powder. In a flat, nonstick pan or skillet on medium heat, place flour tortilla/tortillas to fill pan. Spread pork, peppers, onions and cheese on half of tortilla. Fold over filling. Grill until light brown or golden. Flip and cook other side until light brown or golden. Remove from pan. Repeat until all tortillas are done. Slice and serve. Tip: Serve with sour cream, salsa, guacamole
