INGREDIENTS
½ cup honey
2 teaspoons red-pepper flakes
½ teaspoon ground cayenne
½ teaspoon apple cider vinegar
4 ounces feta cheese
¼ cup Greek yogurt
1 small garlic clove
1 ½ teaspoons extra-virgin olive oil
Salt and freshly ground black pepper to taste
4 Fully Cooked Breaded Chicken Fillets
Baby arugula or other lettuce (optional)
INGREDIENTS
½ cup honey
2 teaspoons red-pepper flakes
½ teaspoon ground cayenne
½ teaspoon apple cider vinegar
4 ounces feta cheese
¼ cup Greek yogurt
1 small garlic clove
1 ½ teaspoons extra-virgin olive oil
Salt and freshly ground black pepper to taste
4 Fully Cooked Breaded Chicken Fillets
Baby arugula or other lettuce (optional)
INSTRUCTIONS
Make the honey:
In a small saucepan, combine the honey, red-pepper flakes and cayenne. Heat over medium until the honey begins to simmer gently, then remove from the heat and let stand for 15 minutes. Strain through a fine-mesh sieve, into a small bowl or container, and discard the solids. Stir in the vinegar. (Honey can be stored in an airtight container at room temperature for up to 3 months.)
Make the whipped feta topping:
Combine feta, yogurt, garlic, and oil In a food processor, blender jar, or tall container for an immersion blender. Blend or process until very smooth, scraping down sides as necessary. Add salt and pepper to taste.
Assemble:
Heat chicken fillets according to package instructions. When chicken is heated through, spread with whipped feta, drizzle with hot honey, and serve over arugula or with your choice of sides.
*Cook chicken until heated to a minimum of 165 degrees farenheit internal temperature (or as dictated by state or local codes) as verified by a calibrated thermometer.
