  • 2 tbsp. olive oil 

  • 1 small onion, sliced 

  • 1/2 red pepper, sliced 

  • 1/2 green pepper, sliced 

  • 2 cloves garlic, minced 

  • pinch each salt and pepper 

  • 1 (10 oz.) can Chicken in Water, drained and shredded 

  • 1-2 chipotle peppers in adobo sauce, minced 

  • 4 small submarine buns 

  • 8 slices bacon, cooked 

  • 4 slices mozzarella cheese 

  • 4 sleces cheddar cheese 


Lime Sour Cream: 

  • 1/3 cup sour cream 

  • 1/2 tsp. lime zest 

  • 1 tbsp. lime juice 

  • 1/4 tsp. salt

Stir in chicken; cook for 3 to 4 minutes or until heated through. Spoon chicken mixture into buns along with bacon, mozzarella and Cheddar cheese. Serve with Lime Sour Cream. Tip: Stir some chopped fresh cilantro into the sour cream if desired.
