INGREDIENTS

  • 1 lb frozen fries 

  • 3 tablespoons olive oil, divided 

  • 2 medium onions, thinly sliced 

  • 1 tablespoon red wine 

  • 1 teaspoons tomato paste 

  • 2 teaspoons Worcestershire sauce 

  • 1 12.5-ounce can Chunk Chicken Breast, drained well 

  • 3 large eggs 

  • Sea salt and black pepper to taste 

  • Chopped parsley (optional)

INGREDIENTS

  • 1 teaspoons tomato paste 

  • 2 teaspoons Worcestershire sauce 

  • 1 12.5-ounce can Chunk Chicken Breast, drained well

INSTRUCTIONS

Cook frozen fries according to package instructions. While fries are cooking, heat 2 tablespoons of oil in a medium skillet over medium heat. Add sliced onion and saute, stirring often, until onion browns and begins to caramelize – about 10 minutes. Add red wine, tomato paste, and Worcestershire sauce to onions and stir to coat. Continue cooking 2-3 minutes more, until fragrant. Mix in chicken and toss with onion mixture to warm through, about 1 more minute. Season mixture with salt and pepper to taste. Spread cooked fries on serving plate and top with onion and chicken mixture. Transfer plate to low-temperature oven to stay warm. Heat remaining 1 tablespoon oil in same skillet over medium-high heat. Fry eggs until whites are cooked through. Remove from heat and season with salt and pepper. Remove fries from oven and top with fried eggs. Garnish with chopped parsley (if using) and serve.
