  • 1/2 onion, finely chopped 

  • 1 stalk celery, chopped 

  • 1 carrot, finely chopped 

  • 1 red pepper, chopped 

  • 2 cloves garlic, minced 

  • 1 tsp. chili powder 

  • 1/4 tsp each salt and freshly ground pepper 

  • 3 tbsp. tomato paste 1 (14.5 oz.) can diced tomatoes 

  • 1 (10 or 12.5 oz.) can chicken in water, drained and shredded 

  • 1/4 cup your preferref buffalo sauce 

  • 6 hamburger buns, toasted 

  • 6 slices swiss cheese 

  • precut vegetable sticks, store bought 

  • prepared blue cheese dip

Spoon mixture into toasted buns with Swiss cheese. Serve with vegetable sticks and blue cheese dip.
