Asian Chicken with Fruit

Picture a lively stir-fry where tender shredded chicken mingles with crisp snow peas and sweet, juicy slices of plums, apricots, or peaches. The sauce—a tangy blend of plum preserves, rice wine vinegar, soy sauce, and a touch of cornstarch—coats everything in a glossy, sweet-savory glaze. Served over rice or Chinese noodles, this dish is a delightful fusion of flavors that’s both comforting and exciting. Ready in just 45 minutes, it’s perfect for a quick weeknight dinner or a special weekend treat.
