INSTRUCTIONS
Make the spicy mayo dip: In a medium bowl, whisk together the mayo, 2 teaspoons of gochujang, lime juice, and sesame oil, until smooth and silky.
Make the Korean BBQ glaze: In a small saucepan, combine the ½ cup gochujang, honey, soy sauce, rice vinegar, ginger, and garlic and heat over medium until bubbling and slightly thickened, about 6 minutes. Remove from heat and set glaze aside. Assemble the glazed tempura chicken: Heat the tempura chicken according to package instructions*. Remove the hot chicken to a large bowl and pour the warm bbq glaze over the chicken pieces. Toss the chicken in the glaze until fully coated. Transfer the glazed chicken to a platter, garnish with toasted sesame seeds and green onions, and serve with mayo dip on the side.
*Cook chicken until heated to a minimum of 165 degrees farenheit internal temperature (or as dictated by state or local codes) as verified by a calibrated thermometer.
